Vietnamese Pho

Cultural Context

Pho originated in Northern Vietnam in the early 20th century and quickly became a national dish. Traditionally enjoyed for breakfast, it symbolizes comfort and community. Today, pho has gained international popularity, with countless variations emerging worldwide, showcasing regional ingredients and flavors.

3 star anise
1 tsp coriander seeds
1.5 litres low sodium chicken stock
5-10 roasted whole black pepper
4 slices ginger
2 slit red chillies
12-15 garlic cloves
1 bunch coriander roots
1 bunch sliced spring onions
2 chicken breasts
handful rice stick noodles
2 tbsp fish sauce
1 tbsp brown sugar
sliced jalapenos for garnish
mint leaves for garnish
basil leaves for garnish
bean sprouts for garnish
lemon wedge for garnish

Heat an accent stock pot and add all the whole spices to it. Toast them lightly till they become fragrant and then add low sodium chicken stock to the pot. Add dry roasted peppercorns into the stockpot.

Add some sliced ginger to the stockpot, with some slit red chillies, garlic cloves, coriander roots and sliced spring onions. Cover the pot and let it simmer for 15 minutes. Add chicken breasts in the pot and cover it again for 8-10 minutes.

Uncover and remove the chicken breasts from the pot. Strain the remaining liquid and add rice noodles into it. Cook them in a deep stockpot, like an accent. Take out the noodles and add fish sauce and brown sugar into it.

Shred the chicken breasts. Into a bowl add the cooked noodles and top them off with the pho. Add shredded chicken, sliced green onions and jalapenos, mint leaves, basil leaves, bean sprouts and a lemon wedge.

Serve it hot with a squeeze of lemon.
