Slice 4 cups of potatoes thinly, about 4 potatoes in total.
Melt 3 tbsp of butter in a skillet over medium-high heat.
Add 3 tbsp of flour to the melted butter to make a roux, cooking for 1 minute.
Add 2 tbsp of minced onions to the roux for flavor.
Pour in 1 1/2 cups of milk and stir until it comes to a boil.
Once boiling, reduce heat to low and add in the cheese, whisking until melted and combined.
Drain the sliced potatoes to prevent browning.
Grease the bottom of a baking pan lightly.
Layer half of the potatoes in the baking pan.
Ladle half of the cheese sauce over the first layer of potatoes.
Add another layer of potatoes on top of the cheese sauce.
Pour the remaining cheese sauce over the last layer of potatoes.
Top with a layer of shredded cheese.
Bake in a preheated oven at 350°F for 1 hour.
Let cool for 20 to 30 minutes before serving.
