In modern times, variations abound, with some opting for vegetarian versions or different cheeses, showcasing its adaptability and enduring popularity.

Boil the potatoes in salted chicken stock until tender.
Remove the potatoes and mash them with butter, cream cheese, chives, salt, and white pepper until smooth.
Prepare the endives by removing loose outer leaves and cutting off the ends.
Blanch the endives in boiling chicken stock for 3-5 minutes.
Grate Gruyère cheese and Parmesan cheese for topping.
Wrap each endive in sliced ham and place them seam side down in the casserole dish.
Spread the mashed potatoes as a base in the casserole dish.
Make a roux by melting 2 tablespoons of butter and adding 2 tablespoons of flour, cooking until it forms a paste.
Gradually whisk in 1 cup and 3/4 of warmed milk until thickened, then add nutmeg.
Pour the cheese sauce over the wrapped endives in the casserole dish and top with grated cheese.
Bake in the oven at 400°F (200°C) until golden brown.
