Honey provides a natural sweetness, while corn syrup is often less expensive.
baking soda

Baking powder can be used but may alter the texture slightly.
Find a thick-bottomed pan and melt caster sugar and corn syrup over low heat.
Dip a brush in water and brush the sides of the pan to prevent sugar crystals from forming.
Continue this process until the sugar bubbles reduce in size.
Cook the sugar to the crack stage at about 152°C.
When the sugar syrup is dropped into chilled water, it should make a cracking sound.
Carefully mix in tartary and baking soda into the sugar syrup.
Immediately pour the mixture into an aluminum foil-lined baking tray and let it rest for an hour.
