Originating from Trinidad and Tobago, Bake & Shark is a beloved street food, traditionally enjoyed on the beaches. The dish combines fried dough (bake) with seasoned shark, often topped with fresh vegetables and sauces. It's a symbol of local culinary culture, reflecting the island's rich maritime heritage. Today, variations exist with different types of fish and toppings, making it a popular choice for both locals and visitors alike.

Salsa can provide flavor with fewer calories.
Add about 2 pounds of flour to a mixing bowl.
Sprinkle in some salt, about a little bit, just for flavor.
Mix the flour and salt together.
Add water gradually to form a somewhat medium soft dough, not extremely hard.
Knead the dough until smooth and elastic, then let it rest for about an hour.
Prepare the shark fillets by seasoning with garlic, shadow benny, jalapeno peppers, hot pepper flakes, seasoning salt, and lemon pepper.
Mix the seasonings into the shark fillets and let them marinate for about an hour.
After the dough has rested, divide it into small portions and shape each into a ball.
Let the shaped dough balls rise for another 20 minutes.
Heat coconut oil in a deep pan until hot.
Dust each dough ball with flour on both sides before frying.
Carefully lay the dough balls in the hot oil, ensuring they rise and become supple.
Fry until golden brown, about 2-3 minutes per side.
Remove the fried dough and drain on paper towels.
Assemble the dish by placing fried shark fillet inside the fried dough.
Top with fresh pineapple, lettuce, and drizzle with tamarind sauce.
