Blueberry Cottage Cheese Breakfast Bake

2 cups whole milk cottage cheese
3 tablespoons honey
2 teaspoons vanilla extract
1/2 cup plain flour
1/4 teaspoon pink Himalayan salt
1/2 teaspoon baking soda

Preheat the oven to 350°F for 40 minutes.

Brush the inside of an enamelware speckled pan with coconut oil.

Crack one egg into a bowl.

Add 2 cups of whole milk cottage cheese to the bowl with the egg.

Stir in 3 tablespoons of honey, using coconut oil to help it come out of the measuring spoon.

Add 2 teaspoons of vanilla extract to the mixture.

In a separate bowl, mix together 1/2 cup of plain flour, 1/4 teaspoon of pink Himalayan salt, and 1/2 teaspoon of baking soda.

Combine the flour mixture into the cottage cheese mixture and stir until combined.

Fold in 1 cup of frozen blueberries into the mixture.

Pour the mixture into the prepared pan and spread it evenly.

Bake in the preheated oven for 30 to 35 minutes.
