Prep the ingredients: slice green onions into chunks, peel and slice ginger into planks, matchsticks, and cubes, peel and slice garlic, and slice shallots in half and julienne them.

Toast whole spices (cinnamon stick, szechuan peppercorns, star anise, cloves) in a pot over medium heat until fragrant, then remove from heat.

Grind dried chilies in a spice grinder until they become chili flakes.

In a large mason jar, combine chili flakes, toasted sesame seeds, salt, white pepper, MSG, and toasted spices, then shake to mix.

Heat 2 cups of avocado oil in a pot over medium-high heat until it reaches 325°F.

Fry shallots in the oil until golden brown (about 7 minutes and 30 seconds), then strain them into the mason jar.

Bring the oil back to 300°F and fry garlic until lightly golden brown (about 3 minutes), then strain into the mason jar.

Fry ginger in the oil at 300°F for about 1 minute and 30 seconds until lightly golden brown, then strain into the mason jar.
