1

Grab ingredients from the Asian market including bonito flakes, dried anchovies, dried shrimp, pork belly, cooking sake, kombu, bamboo shoots, and fish cake.

2

Use a quarter cup of bonito flakes, a quarter cup of dried anchovies (head cut off), and a half inch of ginger, and add to the instant pot.

3

Add 12 cups of water to the instant pot and set it to soup for 90 minutes.

4

Prepare the tare (soy sauce seasoning) by combining 1 cup of soy sauce, another piece of kombu seaweed, 1 cup of mirin, 1/2 cup of cooking sake, 8 scallions, 1/4 cup of sugar, 1/2 inch of ginger, and 8 cloves of crushed garlic in a pot and bring to a boil over medium-high heat.

5

Once boiling, reduce the heat to a simmer and let it cook.

6

For the ramen egg, place a refrigerated egg in warm water for 1 minute to remove carbon dioxide, then boil the egg for 7.5 minutes using a slotted spoon.

7

After boiling, place the egg in an ice bath to stop the cooking process.

8

Cook the flat Japanese ramen noodles according to package instructions.

9

Check the ramen broth; it should smell chickeny and thick.

10

Assemble the ramen by adding two tablespoons of tare, two cups of chicken fish broth, cooked ramen noodles, sliced pork belly, bamboo shoots, fish cake, green onions, and the ramen egg.
