Marinate the pork shoulder in olive oil, orange juice, lime juice, cilantro, mint, oregano, garlic, cumin, lime zest, orange zest, salt, and pepper for at least 24 hours.

Cook the marinated pork on a rack in a foil-lined pan starting at 425°F for 15 minutes, then reduce to 350°F for about 50 minutes until it reaches 160°F internally.

Let the pork rest for 20 to 30 minutes before slicing it into half-inch thick slices.
