Prepare the peppers by using smoked peppers for added flavor.
Use a smoke box on the gas grill to smoke the peppers.
Select 6 jalapenos and some red jalapenos for heat, along with green jalapenos.
Pick super chilies from the greenhouse, selecting a few ripe ones.
Slice the jalapenos lengthwise to enhance the smoking process.
Create a foil pan to hold the smaller super chilies while smoking.
Roughly chop 2 red onions and add them to the foil pan with the peppers.
Smoke the peppers and onions on the barbecue for about 3 to 3.5 hours.
Check the smoked peppers and onions, ensuring they are done.
Take the smoked peppers and onions inside to continue making the sauce.
Add the smoked peppers and onions into a blender.
Blend the peppers and onions until they form a salsa-like consistency.
Transfer the blended mixture into a slow cooker.
Add more tomatoes to the slow cooker.
Add a handful of basil, including the stalks, into the slow cooker.
Add 1 tablespoon of coriander seeds to the slow cooker.
Add 1 tablespoon of peppercorns to the slow cooker.
Add 1 tablespoon of oil to the slow cooker.
Chop fennel into smaller pieces and add to the slow cooker.
Add tinned tomatoes into the slow cooker.
Add 3 celery sticks to the blender and blend them into the mixture.
Add 8 cloves of garlic to the mixture.
Add 150 grams of brown sugar directly into the slow cooker.
Add a piece of ginger, peeled and chopped, into the mixture.
Pour 350 ml of red wine vinegar into the slow cooker.
Mix the ingredients in the slow cooker.
Add 1 liter of water to the tinned tomato cans and pour it into the slow cooker.
Plug in the slow cooker and stir the mixture.
Set the slow cooker to high and cover it.
After about 1 hour, check for bubbles on the sides of the sauce.
Remove the lid to allow the sauce to thicken.
