Chipotle adds smokiness while cayenne is more accessible.
Split the jalapeno down the middle and cut it into quarters, leaving the core and seeds for extra heat.
Place the jalapeno quarters into a saucepan with a little water and boil until soft.
While the jalapeno is boiling, prepare all other ingredients in a mixer (NutriBullet, blender, or food processor).
Once the jalapeno is soft, drain the water and add it to the mixer with the other ingredients.
Add the water used to boil the jalapeno to the mixer for extra heat.
Blend all ingredients in the mixer for about 30 seconds until well combined.
Pour the blended mixture into a saucepan and add a little more water to thin it out if desired.
Simmer the mixture on the stove for about 10 to 15 minutes.
Cool the ketchup properly by transferring it into smaller containers or a shallow container to cool quickly, then refrigerate.
