Add 1 cup of pumpkin puree, 1/2 cup of any kind of milk, 1 egg, 2 tbsp of vegetable oil, and 1 tbsp of sugar into a bowl; stir together.
Add 1 1/2 cups of rolled oats, 1 tsp of baking soda, a pinch of salt, 1 tsp of cinnamon, and 1/2 tsp of ginger to the bowl; stir all together.
Let the mixture stand for about 15 minutes.
Heat a skillet over medium-low heat.
Pour the batter into the skillet and cook for a couple of minutes on each side, just like you would with normal pancakes.
