16 oz angel hair pasta
1/4 cup olive oil
1/2 onion
4 cloves garlic
2 cups diced Plum or Roma tomatoes
2 tablespoons fresh basil
2 tablespoons balsamic vinegar
10.75 oz low sodium chicken broth
crushed red pepper
freshly ground black pepper
grated Parmesan cheese

Bring a large pot of water to a boil and lightly salt it.

Add 16 oz package of angel hair pasta and cook for about 4 minutes or according to the package directions until al dente.

Drain the pasta and set it aside.

Chop half of an onion and mince 4 cloves of garlic.

Dice enough Plum or Roma tomatoes to make 2 generous cups.

Chop enough fresh basil to make 2 generous tablespoons and set the chopped ingredients aside.

Pour 1/4 cup of olive oil into a large deep skillet over high heat.

Add the onions and garlic and sauté until the vegetables are brown, stirring so they don't burn.

Reduce the heat to medium high and add the diced tomatoes, 2 tablespoons of balsamic vinegar, and 10.75 oz can of low sodium chicken broth.

Simmer the sauce for about 8 minutes.

Stir in crushed red pepper to taste and freshly ground black pepper to taste.

Stir in the chopped basil and the pasta, and toss it thoroughly in the sauce.

Simmer for 5 more minutes.

Serve hot topped with grated Parmesan cheese and more red pepper flakes to taste.
