800 grams plum tomatoes
3-4 tablespoons olive oil
1 sprig basil
1 stick celery
1 carrot
1 onion

Heat 3-4 tablespoons of olive oil in a pot.

Add 1 carrot cut in half, 1 stick of celery cut into four pieces, and 1 onion (peeled and cut but kept intact at the root).

Add a pinch of salt and freshly ground black pepper to the pot.

Fry the vegetables for about 5 minutes until they start to brown and become fragrant.

Break up the 800 grams of plum tomatoes using a potato masher or your hands before adding them to the pot.

Pour the tomatoes into the pot with the fried vegetables and stir occasionally.

Let the mixture boil for about 30-40 minutes until it reduces in volume.

Remove the vegetables from the sauce once it has cooked down, leaving just the tomato sauce.

Take a portion of the sauce and put it into a frying pan to heat through.

Cook 80 grams of pasta in plenty of salted boiling water, then drain it.

Toss the drained pasta with the heated tomato sauce in the frying pan until well combined.

Serve with a scattering of parmesan cheese on top.
