800g canned whole tomatoes
2 tbsp extra-virgin olive oil
4 cloves garlic
1/4 cup fresh basil, chopped
1/4 tsp red pepper flakes
2 tbsp butter
Parmesan cheese, for serving

Core the tomatoes by cutting out the core.

Score the skin of the tomatoes.

Blanch the tomatoes in boiling water for 30 to 40 seconds.

Immediately transfer the tomatoes to an ice bath to cool down.
