2 heads of cauliflower

Prepare two heads of cauliflower for pressure cooking.

Place the cauliflower heads in the pressure cooker.

Add about 2 cups of water to the bottom of the pressure cooker.

Seal the pressure cooker and set it to high pressure for 1 minute.

Once the pressure is reached, allow for a natural release for about 8 minutes.

After the natural release, open the pressure cooker and dump out the water, keeping the cauliflower inside.

Add butter, sour cream, salt, pepper, garlic powder, and onion powder to the cauliflower.

Use an immersion blender to blend the cauliflower mixture until creamy.

Divide the creamy cauliflower into two loaf pans and sprinkle shredded cheese on top.

For the soft taco recipe, scramble eggs in a non-stick pan on low heat, folding the tortillas in half to create a pocket.

Fill the tortillas with scrambled eggs and cheese, then pinch them to secure the filling.

Flash freeze the filled tortillas by laying them out flat on a tray before storing them in bags.
