1 (12.8-ounce) package Emeril's Chicken and Apple Sausage
1 tablespoon olive oil
2 tablespoons unsalted butter
1 1/2 cups thinly sliced onions
1 tablespoon light brown sugar
1/4 teaspoon salt
Pinch fresh ground black pepper
1 sheet puff pastry, rolled out to a 15 by 15-inch square
1 large egg
2 tablespoons heavy cream or whole milk
3 tablespoons plus 1 teaspoon fig preserves
2 tablespoons sour cream
1 tablespoon snipped chives

Preheat the oven according to puff pastry instructions.

In a skillet, heat olive oil and butter over medium heat.

Add the sliced onions, brown sugar, salt, and pepper; sauté until onions are caramelized.

Roll out the puff pastry to a 15 by 15-inch square and place it on a baking sheet.

Cut the puff pastry into squares or rectangles.

Place a piece of sausage on each piece of pastry, add a spoonful of caramelized onions, and fold the pastry over the sausage.

Seal the edges and brush with a mixture of beaten egg and heavy cream or milk.
