Take the egg and butter out of the fridge to bring them to room temperature.
Preheat the oven to 325°F (163°C) with the rack in the middle position.
Line an 8x8 square pan with parchment paper and set aside.
In a bowl, combine 1 cup of unbleached all-purpose flour and 1/2 cup of dark brown sugar, stirring together.
Add 1 stick (1/2 cup) of butter to the flour mixture and mix by hand to create the dough.
Transfer the dough into the prepared pan and press it down flat using a spoon.
In another bowl, combine 1 cup of dark brown sugar, 3 tablespoons of unbleached all-purpose flour, and 1/2 teaspoon of kosher salt, tossing together.
Add 2 tablespoons of butter to the sugar mixture and mix by hand.
Crack in 1 egg, add 1 tablespoon of 35% cream, and 1 teaspoon of pure vanilla extract, stirring together.
Stir in 1 cup of chopped walnuts and 1 cup of dark raisins into the filling mixture.
Transfer the filling on top of the pastry base and smooth it out.
Bake in the oven for 40 minutes.
Let cool in the pan for 30 minutes before lifting it out using the parchment paper.
Cut the large square into 16 smaller squares or 25 even smaller pieces.
