Start with 1.5 cups of room temperature water in a bowl.

Add 1/4 teaspoon of active dry yeast and 1 tablespoon of white sugar to the water.

Add 500 grams (roughly 3 cups and 2 tablespoons) of bread flour and 2 teaspoons of Himalayan pink salt to the mixture.

Mix the dough until combined, then add the remaining 1/2 cup of water to any dry patches of flour.

Mix the dough in the evening and let it ferment overnight, or mix in the morning and bake in the evening, giving it a mix every 2-3 hours if done during the day.

30 minutes to an hour later, give the dough a good mix to smooth out any bumps.

Pour enough olive oil to cover the bottom of the pan, ensuring there is enough for both the top and bottom of the bread.

Spread the olive oil around the sides of the pan using your hands.

Flip the dough into the pan as best as you can, it's okay if it doesn't fully cover the pan.

If desired, add flaky sea salt on top just before baking.
