Prepare the filling by adding 1 pound of ground pork to a bowl.

Prepare bok choy by halving, rinsing, and blanching in boiling water for 1-2 minutes. Drain and run under cold water to cool, then mince finely.

Season the filling with 2 teaspoons of chicken seasoning powder, 1 teaspoon of sugar, 3 tablespoons of water, 1 tablespoon of soy sauce, 2 tablespoons of Shaoxing wine, 2 tablespoons of oyster sauce, 1 tablespoon of sesame oil, and 1 teaspoon of white pepper. Mix well for about 30 seconds to a minute, kneading the mixture.

Prepare to wrap the dumplings by having a bowl of water, the filling, and dumpling wrappers ready.

Take one dumpling wrapper, dab water on the top and bottom edges, and place about a tablespoon of filling in the center.

Fold the wrapper in half to seal, and create pleats on one side by folding and pressing down to seal. Repeat on the other side to form a crescent shape.

For a simpler fold, seal the bottom of the wrapper to the top without pleats, ensuring a crescent shape is maintained.

Place finished dumplings on a lined sheet tray and repeat until all filling is used. You should have about 39 dumplings, with some filling left over.

If not cooking immediately, freeze the dumplings until solid and store in a ziplock bag or container.

To cook, heat a nonstick pan over medium heat and add a little oil.
