8 oz halloumi cheese
1 cup brown lentils
4 cups baby spinach
1 large red onion
1 cup baby plum tomatoes
2 slices ciabatta bread
3 tablespoons balsamic vinegar
2 cloves grated garlic
2 cups vegetable broth
1 cup water
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper

Halve the ciabatta bread and chop into 2 centimeter squares.

Slice the baby plum tomatoes.

Place the tomatoes in the ciabatta bread on a baking tray.

Drizzle with olive oil and season with salt and pepper.

Shake the tray to mix.

Place the baking tray on the top shelf of the oven at 200 degrees Celsius and leave it for 10 minutes.

Heat a drizzle of olive oil in a frying pan and add the chopped red onions.

Break the red onions apart with a wooden spoon and cook until soft, about 5 to 7 minutes.

Add balsamic vinegar to the softened onions, turn the heat down, and allow to caramelize, stirring occasionally.
