Crispy Honey Sesame Chicken

1 lb chicken breast
2 egg whites

1/2 cup cornstarch
1/4 cup water
1/4 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon rice vinegar
1/4 cup honey
1/4 cup chicken stock
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 cup vegetable oil
2 scallions
2 tablespoons sesame seeds

Tenderize both sides of the chicken breast with the back of a knife.

Cut the chicken breast into one inch pieces.

In a bowl, add egg white, salt, white pepper, and a corn starch slurry (1 tablespoon corn starch and 3 tablespoons water) to marinate the chicken.
