Trim the tips off the back end of the endives to remove any brown parts.
Slice the endives in half lengthwise.
Place the endives cut-side up on a cookie sheet pan.
Season the endives with kosher salt and black pepper, adding a generous amount of pepper.
Drizzle extra virgin olive oil over the endives, enough to coat them.
Flip the endives by hand to ensure the oil gets into the cracks.
Preheat the oven to 425°F (218°C).
Roast the endives in the oven for about 45 minutes, checking them after 45 minutes and adjusting the time if necessary, as it may take up to an hour.
