Trim the ends of the endives and split them in half with a sharp knife.
Drizzle the endives with extra virgin olive oil, kosher salt, and fresh ground pepper to taste.
Flip the endives over by hand to ensure they are coated on both sides.
Place the endives cut-side down in a 425°F (218°C) oven for 15 minutes.
Flip the endives over to the open side and roast for another 10-15 minutes until browned at the edges.
Remove the endives from the oven and serve.
