1 cup walnuts
3/4 cup coconut flakes
1/2 cup chocolate chips
1/3 cup raisins
1/4 cup cashew nuts

1/2 cup honey
3/4 cup brown sugar
1 tbsp vanilla extract
2 tbsp coconut oil

In a mixing bowl, add 3 cups of old-fashioned oats.

Add 1 cup of walnuts, 1/3 cup of raisins, and 1/4 cup of cashew nuts to the bowl.

Sprinkle in a little salt to balance the taste and mix everything together.

Set aside 3/4 cup of coconut flakes and 1/2 cup of chocolate chips for later.

In a saucepan, mix together 1/2 cup of honey, 3/4 cup of brown sugar, 1 tbsp of vanilla extract, and 2 tbsp of coconut oil.

Heat the mixture over medium heat, stirring for about 2 to 3 minutes until the brown sugar dissolves and bubbles form on top.

Turn off the heat and pour the wet ingredients into the bowl of oats and nuts, mixing until everything is combined.

Transfer the mixture to a baking pan lined with parchment paper and spread it out evenly.

Preheat the oven to 300°F and bake the granola for about 20 minutes, stirring every 10 minutes to ensure even cooking.

After 10 minutes, stir the granola to mix the parts that are golden brown with the parts that are not.

After 20 minutes, remove the granola from the oven and add the reserved coconut flakes, mixing them in with the heat from the granola.

If using thicker shredded coconut, you can bake for an additional 1 to 2 minutes to toast it.

Let the granola cool completely, pressing it down if you want clumpy granola or stirring it for a finer texture.

After 1 hour and 30 minutes, transfer the granola to a mixing bowl and add the chocolate chips, stirring to combine.

Serve the granola with yogurt or as a cereal with milk.
