Heat a large skillet and add approximately 3 tablespoons of olive oil.

Add 1 teaspoon of salt, 1 teaspoon of pepper, the minced garlic, 1 tablespoon of herbs de Provence, and 1 tablespoon of sugar to the onions.

Mix everything well and cook the onions for about 30 minutes over medium heat, covering the skillet and stirring every 5 minutes.

After 30 minutes, the onions should be caramelized and golden brown.

Roll out the puff pastry and place it on a baking sheet, then prick the pastry with a fork.

Spread the caramelized onions evenly over the puff pastry, leaving about 1 cm on the edges.
