1/4 cup Shaoxing wine
1/4 cup rice vinegar
2 tablespoons water
4 cloves garlic
2 tablespoons chili paste
1 tablespoon ginger
2 tablespoons olive oil
1 tablespoon Sichuan peppercorns
1 teaspoon orange dust
2 tablespoons brown sugar
4 scallions
1 tablespoon sesame oil

Marinate the chicken thighs with soy sauce and Shaoxing wine.

Add rice vinegar and water to the marinade.
