Tempeh is a protein-rich alternative with a different texture.

Cut tofu into 1 inch cubes.

Prepare vegetables: cut green zucchini, mushrooms, red pepper, yellow pepper, eggplant, and tomato into approximately 1 inch pieces.

Prepare skewers by alternating firm vegetables and tofu, ensuring snug placement.

In a bowl, combine plain whole milk Greek yogurt, minced garlic, minced ginger, tahini paste, and a little bit of water to create a marinade.

Add salt and garam masala to the marinade and stir until well blended.

Brush the kabobs on both sides with the spicy yogurt marinade.

Oil the grill with avocado oil using a towel to prevent sticking.

Place the skewers on the grill and baste with the spicy yogurt marinade while cooking.

After about 4 minutes, turn the skewers over and baste them again with the marinade.

Remove the kabobs from the grill once they have beautiful color and are tender.

Garnish with grilled green onion and serve with hummus.
