Black Bean Salsa

1/2 minced onion
1/4 cup fresh chopped cilantro
1 medium jalapeno
1 (15 oz) can black beans, rinsed and drained
salt to taste
zest of 1 lime
juice of 1/2 lime
1/2 teaspoon orange zest

In a medium bowl, combine 1/2 minced onion, 1/4 cup fresh chopped cilantro, and 1 medium jalapeno (keeping the seeds for extra kick).

Add 1 (15 oz) can of black beans, rinsed and drained, to the bowl.

Season with salt to taste.

Add the zest from 1 lime and the juice from 1/2 lime.

Add 1/2 teaspoon of orange zest.

Supreme the orange by peeling it and removing all the pith.

Use a sharp knife to cut on either side of the membrane to release the fruit.

Squeeze the juice from the orange into the bowl.

Mix all the ingredients to blend the flavors.
