Black Bean Salsa

2 cans black beans
1 can whole kernel corn
2 large tomatoes
fresh cilantro
3 to 4 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon red wine vinegar
1 purple onion
1 large avocado

Rinse and drain 2 cans of black beans and place them in a bowl.

Add 1 can of drained whole kernel corn to the bowl.

Dice and seed 2 large tomatoes, then add them to the bowl.

Chop fresh cilantro and add it to the bowl for flavor.

Squeeze in 3 to 4 tablespoons of lime juice from 2 fresh limes.

Pour in 2 tablespoons of olive oil and 1 teaspoon of red wine vinegar.

Chop 1 purple onion and add it to the mixture.

Peel and chop 1 large avocado, then add it to the bowl.

Mix all the ingredients together thoroughly.

Add salt and pepper to taste, mixing well after seasoning.

Refrigerate the salsa for a while to allow flavors to blend before serving chilled with baked chips.
