Black Bean Salsa

1 cup black beans
1 cup of corn, boiled
1 ½ roma tomatoes
½ onion
Juice of 1 lime
3-4 sprigs of coriander
3 tbsp olive oil
1 tsp salt
1 tsp cumin
1 tsp black pepper
½ a Chili

In a clay pot or a stockpot bring well-salted water to a boil. Add black beans along with half an onion and two cloves of garlic. Reduce the flame and let it simmer till the beans are cooked. Once done, drain and keep aside.

Meanwhile, deseed the tomatoes and dice them, and chop finely chop onion and chili.

In a large serving bowl, add beans, corn, tomatoes, onion, and chili and mix well. Add cumin and black pepper powder. Check for seasoning and add salt if required. Top of with chopped coriander and serve!
