Black Bean Salsa

1 (15 oz) can black beans
1 (15 oz) can corn kernels
1 red bell pepper
cilantro
scallions
2 limes
1 tomato
pinch of cumin
pickled jalapenos
salt
pepper
2 tablespoons light olive oil

Drain and rinse the black beans and corn kernels.

Chop the red bell pepper into small pieces.

Chop the scallions, using only the white and light green parts.

Roughly chop the cilantro and add it to the bowl.

Cut the tomato in half and scoop out the seeds, then chop it into small pieces.

Chop a few pickled jalapenos and add them to the mixture.

Add a pinch of cumin, and season generously with salt and pepper.

Squeeze the juice of 2 limes into the bowl.

Add 2 tablespoons of light olive oil to the mixture.

Toss all the ingredients together until well combined.
