Wash and pat dry the zucchini.

Cut off the ends of the zucchini and shred it using a box grater or food processor.

Pour the shredded zucchini into a colander and sprinkle with about 1 teaspoon of salt. Let it set for 10 minutes.

After 10 minutes, place the zucchini onto paper towels and pat dry to remove excess water.

In a mixing bowl, combine the dried zucchini with Parmesan cheese, almond flour, coconut flour, baking powder, salt, garlic powder, onion powder, and 2 well beaten eggs. Mix well.

Heat oil in a frying pan.

Spoon the mixture into the hot oil, pressing down to create patty shapes.

Fry until the edges become golden brown, then flip and cook the other side.

Once the fritters reach the desired color, remove them from the oil and place on paper towels.
