Zucchini Fritters

4 rashers rindless bacon, chopped
1 cup corn kernels
1 zucchini, trimmed, grated, excess liquid squeezed out
1/3 cup self-raising flour
2 eggs, lightly beaten
80 gram feta, crumbled
2 green onions, thinly sliced
1 tablespoon chopped parsley
oil, for shallow-frying
rocket, to serve
250 gram cherry tomatoes, pan-fried, to serve
sweet chilli sauce, to serve
sour cream, to serve

In a bowl, combine bacon, corn, zucchini, flour, egg, feta, onion and parsley. Season to taste.

Heat oil in a large non-stick frying pan on medium. Cook heaped tablespoons of mixture in 3 batches, for 2-3 minutes each side, until golden and cooked through. Drain on paper towel and keep warm.

Top with rocket and serve with tomatoes, sour cream and sweet chilli sauce.
