Zucchini fritters, or 'Zucchini-Puffer', are a popular dish in Germany, especially during the summer when zucchini is in abundance. They are often enjoyed as a snack or side dish, showcasing the versatility of this vegetable. Today, variations can be found globally, with many adapting the recipe to include different herbs and spices.
Cut the edges off the zucchini and grate them using a grater.
Add a pinch of salt to the grated zucchini to help release water.
Transfer the grated zucchini into a colander and strain it, using cheesecloth if possible to eliminate more water.
Transfer the strained zucchini into a bowl, resulting in about 2 and 1/2 cups of zucchini.
Incorporate the remaining ingredients: 1/4 cup gluten-free flour, 1/4 cup Parmigiano-Reggiano cheese, 2 minced garlic cloves, 1 lightly beaten egg, a bit more sea salt, and black pepper.
Mix everything until well combined, aiming for a consistency that is not too liquidy or dry.
Preheat the air fryer to 300 degrees Fahrenheit for 5 to 10 minutes.
Shape the mixture into fritters using 1/4 cup for each fritter and place them in the air fryer basket.
Cook the fritters at 325 degrees Fahrenheit for 6 to 8 minutes without flipping, without adding oil initially.
After 6 to 8 minutes, flip the fritters and increase the temperature to 400 degrees Fahrenheit, cooking for another 8 minutes, adding oil during this second cooking phase.
Prepare the dipping sauce by mixing 1/2 cup of Greek yogurt, 1/2 tablespoon of finely chopped chives, 1 minced garlic clove, a pinch of salt, and black pepper.
Plate the fritters with the dipping sauce.
