Cut the edges off the zucchini and grate them using a grater.

Transfer the grated zucchini into a colander and strain it, using cheesecloth if possible to eliminate more water.

Transfer the strained zucchini into a bowl, resulting in about 2 and 1/2 cups of zucchini.

Incorporate the remaining ingredients: 1/4 cup gluten-free flour, 1/4 cup Parmigiano-Reggiano cheese, 2 minced garlic cloves, 1 lightly beaten egg, a bit more sea salt, and black pepper.

Mix everything until well combined, aiming for a consistency that is not too liquidy or dry.

Preheat the air fryer to 300 degrees Fahrenheit for 5 to 10 minutes.

Shape the mixture into fritters using 1/4 cup for each fritter and place them in the air fryer basket.

Cook the fritters at 325 degrees Fahrenheit for 6 to 8 minutes without flipping, without adding oil initially.

After 6 to 8 minutes, flip the fritters and increase the temperature to 400 degrees Fahrenheit, cooking for another 8 minutes, adding oil during this second cooking phase.

Prepare the dipping sauce by mixing 1/2 cup of Greek yogurt, 1/2 tablespoon of finely chopped chives, 1 minced garlic clove, a pinch of salt, and black pepper.
