Zucchini Fritters

Grate 4 fresh zucchini and sprinkle with salt, letting it rest for 10 minutes to draw out water.
Squeeze the grated zucchini to remove excess water.
In a bowl, mix the grated zucchini with 4 eggs, 4 tablespoons of grated pecorino cheese, 1 tablespoon of plain flour, and 3 tablespoons of self-raising flour until well combined.
Heat olive oil in a saucepan.
Scoop a spoonful of the mixture and place it in the hot oil.
Fry for 1 minute on each side until golden brown.
