Zucchini Fritters

1 medium-sized red onion
2 crushed garlic cloves
3 or 4 champignon mushrooms
1 red bell pepper
1 small broccoli
1 medium carrot
4 tablespoons gluten-free flour

Crack 2 eggs into a bowl.

Add black pepper to taste, 1 teaspoon of salt, 1 teaspoon of dried basil, and 4 tablespoons of yogurt to the eggs.

Whisk everything together thoroughly.

Grate 2 medium-sized zucchinis finely.

Transfer the grated zucchini into a sieve, add some salt, and mix it with your hand, squeezing it slightly.

Set the zucchini aside to let it release its juice.

Grease a frying pan with olive oil and let it heat up.

Dice 1 medium-sized red onion into small pieces.

Sauté the diced onion in the heated frying pan.

Add 2 crushed garlic cloves to the sautéed onion.

Slice 3 or 4 champignon mushrooms and add them to the frying pan.

Add 1 red bell pepper to the frying pan and sauté all the vegetables over high heat for about 5 minutes.

Press the grated zucchini lightly with your hand to squeeze out any remaining juice and transfer it to a bowl.

Add the sautéed vegetables to the bowl with the zucchini.

Cut off all the soft florets from 1 small broccoli.

Grate 1 medium carrot on a medium or fine grater and add it to the bowl.

Add the egg mixture to the bowl and gradually add 4 tablespoons of gluten-free flour, mixing as you go.

Heat a frying pan over medium heat and grease it with olive oil.

Form several vegetable fritters using 1 tablespoon of the mixture for each fritter, depending on the size of your frying pan.

Cook the fritters for about 2 or 3 minutes on one side, then flip them and cook for the same amount of time on the other side.
