1 kg zucchini
1 tsp salt
2 eggs
1 bunch green onion
1 onion

dill
5 leaves Greek mint
250 g feta cheese
120 g oat flakes
black pepper

Add 1 kg zucchini to a bowl.

Sprinkle 1 tsp salt over the zucchini and mix well.

Let the zucchini strain for 20 minutes.

In a separate bowl, crack 2 eggs.

Chop 1 bunch of green onion and 1 onion, and add to the eggs.

Add chopped parsley, dill, and 5 leaves of Greek mint to the mixture.

Crumble 250 g feta cheese and add it to the bowl.

Add 120 g oat flakes and black pepper to taste.

Mix all the ingredients well to combine.

Shape the mixture into fritters.

Drizzle olive oil on a baking tray.

Place the fritters on the tray and put them in a preheated oven at 200°C/392°F for 15 minutes.

After 15 minutes, put them back in the oven for another 7 minutes.
