1 pound ground turkey
1 tablespoon butter

1/2 onion, chopped
1/2 red pepper, chopped
1/2 cup corn
1/2 can diced tomatoes with juice
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon salt
1/4 cup water
1/2 cup salsa
4 blend cheese
green onions for garnish

Cut zucchinis lengthwise in half.

Scoop out the inside of the zucchinis, leaving about 1/4 inch around the edges, and place the pulp in a bowl.

Boil the zucchini halves in salted water for 1 minute to soften them.

Place 1/2 cup of salsa on the bottom of a baking dish to prevent sticking and add flavor.

In a pan, heat 1 tablespoon of butter and a slurry of olive oil.

Add 1/2 chopped onion and 1/2 chopped red pepper to the pan and cook until translucent.

Add 1 pound of ground turkey to the pan and cook until browned.

Mix in 1/2 cup of corn and about 3/4 of the zucchini pulp.

Add 1/2 can of diced tomatoes with juice and mix well.

Add 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon oregano, and 1 teaspoon salt to the mixture and stir.

Add 1/4 cup of water to the mixture and simmer for 20 minutes.

Preheat the oven to 400 degrees Fahrenheit.

Ladle the turkey mixture into the zucchini boats and layer with cheese.

Cover the baking dish with tinfoil and bake in the preheated oven for 35 minutes until the cheese is melted and golden.

Garnish with sliced green onions before serving.
