1/2 cup black beans, drained and rinsed
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheese (optional)
2 tbsp olive oil
2 tbsp fresh cilantro, chopped

Preheat the oven to 375°F (190°C).

Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create boats.

In a large bowl, combine the cooked quinoa, cherry tomatoes, corn, black beans, cumin, chili powder, salt, and black pepper.

Drizzle the zucchini boats with olive oil and season with salt and pepper.

Fill each zucchini boat with the quinoa mixture, pressing down gently to pack it in.
