Prep the dough in advance and allow it to sit, then wrap it.
Boil potatoes until tender, then mash them with black pepper, salt, butter, mozzarella cheese, and heavy cream.
Roll out the dough and cut out shapes using a medium-sized cookie cutter.
Scoop about a teaspoon of filling into each dough shape and fold it over, pressing firmly to seal without using water or egg wash.
Boil water with salt, then add the pierogies and cook until they float, about 2-3 minutes.
Fry bacon until crispy and render out the fat, then remove the bacon from the oil.
Strain the bacon oil, discarding half, and add butter to the skillet.
Sauté onions until translucent, then add garlic (optional).
Fry the pierogies in the skillet, ensuring they have direct contact with the pan for a golden brown color, about 5-7 minutes on low to medium heat.
Add fresh parsley to the dish before serving.
