Cut the rolled dough into strips, approximately 2 inches wide.
Place dollops of the potato filling onto the dough strips.
Fold the dough over the filling and pinch the edges to seal, ensuring no filling leaks out during boiling.
Set the filled pierogies on a baking sheet until ready to cook.
Boil water in a large pot and add the pierogies, cooking until they float and then for an additional minute.
Remove the pierogies carefully with a large ladle to avoid breaking them.
In a skillet, sauté chopped onions in butter until golden.
Add the boiled pierogies to the skillet and crisp them up in the butter and onions.
