Line an 8x8 or 9x9 inch baking dish with parchment paper or foil, making four snips at the corners and folding it to fit.
Cut 1 cup of unsalted butter into pieces and melt it in the microwave in 30-second bursts until fully melted.
Crush graham crackers to get about 2 cups (240 grams) of crushed crackers, either by hand or using pre-crushed.
Add 1 cup (300 grams) of peanut butter to the melted butter and mix until smooth, ensuring no pockets of butter remain.
Incorporate 1 and 3/4 cups (210 grams) of powdered sugar into the peanut butter mixture until smooth, breaking up any clumps.
Fold in the crushed graham crackers gently to maintain larger pieces.
Transfer the mixture into the lined baking dish and smooth it out to the edges.
Chill the mixture in the refrigerator while preparing the chocolate topping.
Melt 1 and 1/2 cups of semi-sweet chocolate and 1/4 cup (65 grams) of peanut butter in the microwave in 30 to 40-second bursts, stirring after each burst until smooth.
Pour the melted chocolate mixture over the chilled peanut butter bars and smooth it out with a spatula.
Chill the bars in the refrigerator for a little over an hour until set, then cut into desired shapes.
