Baked Penne Pasta

1 medium eggplant, diced
1 medium onion, chopped
1 medium bell pepper, chopped
1 medium zucchini, chopped
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp salt
2 cups gluten-free penne pasta
2 cups store-bought marinara
1/4 cup fresh basil, chopped
1 cup mozzarella, shredded

Preheat the oven to 500°F.

Chop eggplant, onion, bell pepper, and zucchini and place them in a bowl.

Add olive oil and Italian seasoning to the vegetables and toss them together.

Line a baking tray with parchment paper and spread the seasoned vegetables on it.

Roast the vegetables in the oven for about 10 minutes.

In a pot, add water and bring it to a boil, adding a little salt.

Once boiling, add gluten-free penne pasta and cook for about 5 to 7 minutes, covering the pot to trap heat.
