Wash, peel, and chop the carrots.

Wash the baby new potatoes and leave them unpeeled.

Chop the beef roasting joint into pieces.

Heat oil in a frying pan until hot.

Season the beef with salt, pepper, garlic, and onion granules.

Seal the beef in batches to avoid overcrowding the pan.

Remove the beef and add chopped onions to the same pan to brown them.

Put the lid on the slow cooker and set it to low for about 8 hours.

After 5 and 1/2 hours, check the stew; it should be rich and flavorful with soft potatoes and tender meat.
