Finely mince garlic and ginger or use a microplane to grate them.
Peel the ginger skin using a spoon.
Chop the white and light green parts of two green onions, saving the darker green tops for later.
Add 1 tablespoon of toasted sesame oil to a saucepan over medium heat.
Cook the garlic, ginger, and green onion until softened, then turn off the heat.
Stir in soy sauce, maple syrup, molasses, peanut butter, rice wine vinegar, Gochujang, and Chinese five spice.
Bring the mixture back to a simmer.
Mix cornstarch with water and stir it into the sauce to achieve a sticky consistency.
Store the homemade sauce in a jar in the fridge until ready to use.
