In a bowl, mix 1 tbsp of yeast, 1/2 tbsp of sugar, and 1/2 cup of sour cream; set aside.
In a large bowl, combine 2 1/2 cups of flour and 1 cup of cold salted butter, cutting it into small chunks.
Add 2 egg yolks and 1/2 tsp of vanilla to the yeast mixture; mix well.
Pour the yeast mixture into the flour and butter mixture; stir with a wooden spoon until combined.
Form the dough into a ball, cut in half, and wrap each half in plastic wrap; refrigerate for 2-3 hours or overnight.
For the filling, beat 2 egg whites until stiff peaks form; add sugar to taste and 3/4 cup of ground pecans, mixing gently.
Roll out the dough on a floured surface into a thin circle, cut into 8 pieces.
Place 1 tsp of filling on each piece and roll from the wide end to the tip.
Place cookies on a baking sheet and bake in a preheated oven at 350°F for 20-25 minutes, checking after 15 minutes.
Dust cooled cookies with powdered sugar.
