The night before preparation, wash 0.5 lb of pearl barley to remove impurities and soak it in enough water to cover it.

The next day, drain the water from the barley and set it aside.

Prepare the vegetables by shelling 0.5 lb of green beans, 0.5 lb of green peas, and 0.5 lb of green peas, then wash them well.

Wash and chop 2 medium carrots, cutting them into small cubes after peeling.

In a large pot, add 1.5 lb of beef bone and 3 liters of water to serve 7 to 8 portions.

Add half a piece of long onion, opened at one end, and a sprig of cilantro, along with 1 tablespoon of salt.

Cover and bring to a boil over high heat.

Once boiling, add the green beans and pearl barley, stir a bit, cover, and cook for about 15 minutes.

While waiting, peel 1 lb of criolla potatoes and slice them thinly, as they will dissolve in the soup.

After 15 minutes, add the sliced criolla potatoes to the pot, stir, cover, and after about 12 minutes, add the green peas, green beans, carrots, and any remaining vegetables, cover, and cook for another 20 minutes on medium-high heat.

Peel and wash 3 large pastusa potatoes, keeping them in water to prevent oxidation, and chop them into pieces after 20 minutes.

Add the pastusa potatoes to the pot, stir, cover, and let cook for another 5 minutes.

Chop the spinach and add it to the pot after the 5 minutes, along with another teaspoon of salt or to taste, and the chopped garlic, stirring well and covering again for another 13 minutes.

After 13 minutes, uncover the pot, remove the piece of onion and cilantro, and let it thicken uncovered for about 10 minutes.

Chop a handful of cilantro to garnish the soup before serving.
