Slice the bacon to render it slowly over low heat.
While the bacon is rendering, prepare the pancake batter.
In a bowl, combine 2 cups of flour, 1 teaspoon of baking soda, and 0.5 teaspoon of baking powder.
Separate 2 eggs, placing the yolks in one bowl and the whites in another.
Whip the egg whites until they reach medium peaks to incorporate air for fluffiness.
In another bowl, mix 1 cup of sour cream and 1 cup of milk together.
Combine the sour cream and milk mixture with the flour mixture, but do not mix yet.
Add the rendered bacon fat to the pancake mixture and gently fold in the peanut butter.
Add some of the crispy bacon to the batter.
Gently mix the batter, being careful not to overmix, and add more milk if needed for consistency.
Cook the pancakes in the pan used for rendering the bacon, rubbing them with butter after cooking.
