Heat milk in a large pot on medium low until it reaches 180 to 190°F.
Prepare serving-sized jars with lids for yogurt.
Once the milk reaches the desired temperature, place the pot in the fridge to cool until it reaches 100 to 110°F (takes a couple of hours).
Remove the milk skin that forms on top of the heated milk to ensure a smooth yogurt texture.
Add plain yogurt and probiotics to the cooled milk and whisk until well dissolved.
Fill the jars with the milk mixture, leaving space at the top to prevent contact with the lid.
Place the jars in a warm place for about 8 hours to culture (recommended method: in the oven with the light on).
After 8 hours, check the yogurt; it should have a creamy texture with cream floating on top.
